With allergies to suphites becoming more common, winemakers are starting to ask whether sulphite is truly needed. No sulphite added (NSA) wines have the potential for more pronounced flavor; sulphited and NSA versions of the same wine have markedly different tastes, with the NSA version possessing “greater purity, intensity and liveliness, with rounder, brighter fruit flavours”. But while forgoing sulphites preserves the natural taste of the wine, winemakers also forgo the protection they give; NSA wines are more susceptible to spoilage and microbial infection that turns intense flavors into yeasty disappointments.

Overcoming Bias
Kai Cheng’s professor had a brilliant scheme. In his first lecture, he promised that each lecture would feature a “Lie of the Day”. But why?
